Pesto spinach artichoke Mac and Cheez

• 1 box of wheat or rice elbows
• 1 lb bag of frozen artichokes (thawed)
• 1 bunch of Spinach (stems removed)
• 3 packs of Vegan cheez (your choice)
• 2 tbsp of Nutritional Yeast
• 1 cup of Rice or Hemp milk
• 3 tbsp of Earth Balance
• 2 tsp of sea salt
• black pepper to taste
• 1 cup of pesto (see recipe)

Boil noodles on medium as directed by box. Once al dente, combine half of the
cheez and the remainder of the ingredients in a bowl and stir. Pour mixture into a
9x13in pan, cover with the rest of the cheez. Bake at 400 for 20 minutes. Serve and
enjoy. (serves 8)
