Thai Kale Salad

(Serves Four)

  • 1 bunch of organic kale
  • 1/4 cup o nut butter
  • 1/2 head of red cabbage
  • 2 tbs of grated ginger
  • juice of 2 limes
  • 1/4 cup of olive oil
  • 1 red bell pepper
  • 1/2 of a red onion
  • good quality salt
  • ground red pepper
  • maple syrup to taste
  • slivered almonds (optional)

Chop kale fine, cover with olive oil then massage oil into the kale. The kale should be weighed down by the oil. Pour in juice of lime and other vegetables. Mix in the nut butter. Season, stir and sit. Serve after 15 minutes at room temperature or chill for late
